Andrew made a Mediterranean Sandwich with leftover Roasted Chicken and ingredients from our pantry (can you tell we mostly eat Mediterranean food?). Y'all, it was mouthwateringly FANTASTIC. 🤤
Andrew's Pantry Mediterranean Sandwich - Heat potatoes and roasted chicken in skillet with olive oil till warm and sightly crispy. Toast pita or naan. Assemble sandwich: if using pita, cut pita to make a pocket. Alternate ingredients till full. Enjoy!
- Harissa yogurt sauce
- Mediterranean salad
- Chopped roasted garlic potatoes
- Chopped roasted chicken
- Hummus
- Kalamata olives
- Feta
- Optional: Sliced tomatoes
- Pita or Naan
Chopped Roasted garlic potatoes - Toss all ingredients and roast at 375 F for 30-50 minutes or until done.

Harissa Yogurt Sauce - Mix all ingredients
- Harissa, 1 part
- Greek yogurt, 3 parts
- Za’atar
- Dill
- Lemon juice
- S&P
Quick Mediterranean Salad - Mix all ingredients and set aside.
- Sauteed onion— sliced very thin, sautéed till browned, and cooled
- Vinegar 1/2 cup
- 2 Bell peppers, sliced thin, sautéed till browned, and cooled
- 1 Shredded carrot
- Olive oil 1 tablespoon
- Dill 1/2 tablespoon
